Making Process
Step 1: Selecting Raw Mangoes
Fresh, firm, sour raw mangoes are carefully selected from local farms in Malda. Only unripe mangoes are used to ensure authentic taste and long shelf life.

Step 2: Washing & Drying
The mangoes are thoroughly washed to remove dirt and impurities, then sun-dried completely to eliminate moisture—an essential step to prevent spoilage.

Step 3: Cutting the Mangoes
Dried mangoes are cut into uniform pieces using clean utensils. The seed is retained as it enhances the pickle’s traditional flavor.

Step 4: Adding Salt & Turmeric
Rock salt and turmeric powder are mixed with the mango pieces. This helps in preserving the pickle and gives it a natural color and aroma.

Step 5: Sun Resting (Water Release)
The salted mangoes are kept under sunlight for 1–2 days. This allows excess moisture to release naturally and softens the mango pieces.

Step 6: Preparing Spice Mix
Traditional Malda spices like mustard seeds, fenugreek, fennel, red chili powder, and nigella seeds are dry-roasted and freshly ground.

Step 7: Mixing Mangoes with Spices
The spice mix is added to the mango pieces and mixed thoroughly by hand to ensure each piece is evenly coated.

Step 8: Adding Mustard Oil
Cold-pressed mustard oil is heated, cooled, and poured over the mixture. It acts as a natural preservative and enhances flavor.

Step 9: Sun Maturing
The pickle is kept in a glass or ceramic jar and sun-matured for 7–10 days, stirred daily to develop its rich, authentic taste.
